#SaladSaturday – Chef Z’s Creamy Romaine Salad

We shouldn’t be surprised, but the new year has started off with highs in the upper 80s! Isn’t this supposed to be winter?

That said, sometimes you need a cool meal to help keep you refreshed and energized to take on the day once more. Luckily, Chef Zelicious has a great option that should do the trick – Creamy Romaine Salad!

INGREDIENTS:
4 Heads Organic Romaine Lettuce, washed dry and chopped
1 Large Shallot – chopped
1⁄2 Bunch Fresh mint leaf
1⁄2 Cup Organic Cherry tomatoes – whole
1 Cup Chickpeas
1 Cucumber – chopped
1⁄2 Red Bell pepper – chopped
1⁄2 Yellow Bell pepper – chopped
1⁄2 Cup Sunflower seeds
1 Container Mixed sprouts – optional

Tahini Dressing:
1⁄2 Cup Tahini pasta
2 Cloves Garlic
Juice of one lime
1⁄3 Teaspoon cumin powder
1⁄2 Teaspoon cumin seeds
Salt and Pepper to taste
1⁄3 Teaspoon cayenne pepper – optional

Put all the ingredients in a blender or vitamix.
You may need to add some water if needed.

Top salad with dressing, and enjoy!
