It’s grilling season! The time of year when steak, chicken, or even your favorite fish cooked over an open flame becomes the centerpiece of more than a few meals per week. The weather is tolerable, and the grill beckons!
Of course, one cannot survive on meat alone (unfortunately.) That’s when a yummy side dish, such as the one featured this week, completes every meal.
SAUTEED GARLIC ASPARAGUS
● 3 tablespoons coconut oil or olive oil
● 1 bunch fresh asparagus spears
● 3 cloves garlic, chopped
● Salt and pepper to taste
● ½teaspoon fresh lemon juice
Melt the coconut oil in a large skillet over medium-high heat. Add the garlic, lemon juice and asparagus spears; cover and cook for 10 minutes, stirring occasionally, or until asparagus is tender. If you like your asparagus well done, reduce heat and cook an additional 10 minutes. Garnish with pine-nuts.
