Pesto is the name of the game in sauces this year, and everyone has their own take. Try out this amazing Sun Dried Tomato Pesto the next time you’re feeling saucy!
● 2 Cups sun dried tomatoes -marinated in olive oil
● 4 Cloves garlic
● 1/3 Cup pistachio nut
● 2 Tbsp grated goat cheese-optional
● 1 cup fresh basil leaves
● 1 Tbsp fresh oregano
● 1⁄2 Cup extra virgin olive oil
●Salt and pepper to taste
Add all of the pesto ingredients to the bowl of a food processor and pulse until smooth to your liking.
Taste and adjust seasonings with more sea salt and even garlic if desired. Add more olive oil as needed. Refrigerate until ready to use.
If prepared a day in advance then bring it to room temperature for about 5 minutes before serving.
This is great for pasta, dipping, or on your favorite protein.
